Apple Tart Baked Oatmeal

This is basically pimped out porridge! Baked so that it's portable and can be eaten for breakfast or as energy bars.  You will make this over and over again! These are great for kids too.

Quantity:

Makes either 4 Breakfast size portions or 6 smaller ‘energy bar’ sized portions.

Cost:

€2.22 in total

Ingredients:

  • 1 Cup Apple Sauce
  • ½ Cup Greek Yoghurt
  • 2 Tbsp Honey
  • 2 Cups of porridge oats- use traditional chunky oats, not quick-oats
  • 50ml Almond Milk (or whatever milk you use)
  • 2 Eggs
  • 2 Tbsp Flaked Almonds
  • 1 Tbsp coconut Oil
  • 1 Tsp Vanilla Extract
  • ½ Tsp Baking Soda
  • ½ Tsp Baking Powder
  • 2 Tsp Cinnamon

Method:

  1. Heat the oven up to 175C
  2. Grease a glass baking dish with coconut oil
  3. In no particular order, mix together all of your ingredients apart from the flaked Almond
  4. Give the mixture a really good mix so it’s all well combined
  5. Pour into the greased baking dish
  6. Flatten it down with the back of a spoon and cover with the flaked Almonds
  7. Bake for 35-45 Minutes until its cooked through and golden on top
  8. Remove from oven and either serve and eat straight away, or allow to cool in the dish before cutting into 4 or 6 bars and then removing from the dish.
  9. These freeze well, or will keep for a few days in the fridge

Tip:

  • These are really handy to bake and pop in the freezer in portions for emergency breakfasts when you sleep it out or are in a hurry etc. or for a quick bite to eat when you are too lazy or busy to make anything,
