Cherry & Almond Breakfast Bars

These are inspired by Bakewell Tart and Mr Kipling's tasty little Cherry Bakewells! This will make 8 large breakfast size portions- Individual or baked in a large glass dish and cut into bars. Or 16 smaller bars to use as healthy snacks or kids breakfasts. The combination of the oats, greek yoghurt and egg whites makes this breakfast naturally high in protein, and low in fat.

Quantity:

Makes either 8 Breakfast size portions or 16 smaller ‘energy bar’  or child sized portions.

Ingredients:

  • 200g Cherries- fresh or frozen, stones removed
  • 200g Low Fat Greek Yoghurt (Glenisk/ Liberte etc)
  • 2 Tbsp Honey
  • 2 Cups of Porridge Oats- use proper chunky ones, not quick oats
  • 125ml Milk (use whatever milk you use)
  • 1 Cup of liquid egg whites
  • ½ Cup Ground Almonds
  • 1 Tbsp Flaked Almonds
  • 1 Tbsp Vanilla Extract
  • 1 Level Tsp Baking Soda
  • 1 Level Tsp Baking Powder

Method:

  1. Heat the oven up to 160C
  2. Grease a glass baking dish with coconut oil or set out your silicone moulds on an oven tray (no need to grease these)
  3. Mix all of your wet ingredients together in a jug: Milk, greek yoghurt, Vanilla Extract, Egg Whites, Honey.
  4. In a bowl mix your dry ingredients and Fruit: Oats, Baking Powder, Baking soda, Ground Almonds, Cherries.
  5. Now pour the wet ingredients into the dry ingredients and stir until combined and make sure the fruit is evenly distributed.
  6. Pour the mixture into your dish or moulds and top with the flaked almonds.
  7. Bake for 45 minutes, then turn the oven up to 200C and bake for a further 10-15 minutes until the top is a light golden colour and springy when you press it. The individual portions will take less time to cook than making it in a big dish, so keep checking the oven from 30 minutes onwards until it looks like it’s done!
  8. Leave to cool in dish or moulds before removing or slicing into bars- unless you are eating it straight away!

Tip:

  • Kids will love these, they make a great snack or breakfast
  • These are really handy to bake and pop in the freezer in portions for emergency breakfasts when you sleep it out or are in a hurry etc. or for a quick bite to eat when you are too lazy or busy to make anything,
  • These are lovely made with other fruit too like blackcurrants or raspberries
