Piña Colada Energy Balls

These are so zingy! Which is a refreshing change from all of the oaty/nutty/ chocolatey treats! These are great as an afternoon ‘pick me up’ or a pre-gym snack, but I’m pretty sure these would pass as a breakfast too if you only have time to ‘grab and go’ on a morning!

Makes 12 Large or 24 small

Cost:

€4.75 or 40c per Ball

Ingredients:

  • 1 Cup raw cashew nuts
  • The Juice and Zest of a Lime
  • ½ a Large Pineapple- Chopped up (you could buy pre chopped fresh pineapple too)
  • Half a cup of unsweetened desiccated coconut
  • 3 TBSP Milled Chia Seeds
  • 3 TBSP Milled Linseed
  • 1.5 cups of oats

Method:

  1. Heat the oven up to 175C
  2. Put a sheet of baking paper on an oven tray, spread out your cashew nuts and bake for 15 minutes or until golden- remove from the oven and allow to cool down.
  3. Heat a dry frying pan on the hob (no oil) add your coconut and toast until golden. WARNING- This happens really fast, so keep tossing it and moving it around in the pan, it will take a minute or 2
  4. Meanwhile, chop up the pineapple, including the centre core part that you don’t usually eat (that’s where all the good stuff is) and put it into the food processor with the chia seeds, linseed, lime zest & juice and the cashew nuts. Pulse the mixture a couple of times until combined. Don’t pulse for too long or the pineapple will get too runny. Have a little taste of the mix- Yum!
  5. Scoop the mix out into a big mixing bowl and stir in 1.5 cups of oats- mix it all together well.
  6. Now roll into balls with your hands and roll the balls in the toasted coconut to coat them, and lay the out on a clean plate. When you’ve done this with all the mix, cover with cling form and refrigerate.  Store these in the fridge.

Tip-

  • I make the energy balls big (about the size of a clementine) and I just eat one at a time, but you could make them small and have a few as a portion size.
  • Chop up the other half of your pineapple and put in a Tupperware to eat in its fresh state.
  • Don’t throw away the core you chop out- you won’t want to munch on this because of the texture, but its full of goodness and tastes great, so keep it to throw into a smoothie!
