Sweet Pork Tenderloin

This is something I've been cooking for about 10 years now, it never gets boring! The meat tastes better if you can marinate it for a couple of days before you cook it, so if possible, leave the meat marinating for 2 nights in the fridge before you cook this. This also tastes amazing as a sandwich filling, with coleslaw!

Ingredients:
- Pork Tenderloin- This recipe is based on one weighing 650g
- 1 Tbsp reduced salt soy sauce
- 2 Tbsp Maple Syrup
- 1 Tbsp Rapeseed Oil
- 1 Tsp Grated Ginger (I use the paste in the tube)
- 2 Garlic Cloves- crushed (I use the paste in the tube)
- 1 Tsp Chinese Five Spice
- The Juice of an orange- approx. 3 Tbsp
Method:
- Prepare the pork by trimming away any fat, then either score it with a knife or prick it all over with a fork. This will help it absorb the flavours of the marinade.
- Mix together all of the other ingredients and place in a plastic food/ freezer bag & place the pork into the bag and rub it all together well.
- Leave the pork marinating in the fridge for a night or two.
- When you are ready to cook the pork, Turn the oven on to 200 degrees
- Heat a frying pan to full heat on the hob. Do not put oil in it.
- Place the pork in the pan to brown it off. DO NOT POUR THE MARINADE IN TO THE PAN, KEEP THIS IN THE BAG.
- Keep turning the pork until it is browned on all sides, but not fully cooked, now place in a foil covered oven proof dish and cook in the oven for 30 minutes.
- Whilst the pork is cooking, pour the marinade into the frying pan you used to cook the pork in, let it cook out for a minute or two, you should be stirring it and scraping any bits of pork off the pan whilst you are doing this.
- Pour the marinade into a bowl and put to one side.
- When the pork is ready, take it out of the oven and close the foil around it to make a parcel. Leave to rest like this at room temperature for 20-30 minutes.
- Once the pork is rested, finely slice it, and place it into a dish, pour the marinade over the top of it and rub it into the pork. Cover with cling firm and let the pork absorb the marinade until you are ready to eat / portion it out.

Tips-
- This goes really well with green veg because the pork is sweet, so kale, asparagus, green beans, cabbage etc all go really nicely with it.
- Pork Tenderloin is sometimes referred to as pork steak also- just in case anyone is confused… it’s the same thing!
