Turkey Chili & Cauliflower Rice

This dish feels like real comfort food!. It’s so low carb and calorie when served with cauliflower rice too, I really love this meal. It tastes just as good after it’s been frozen too.

Quantity:

It makes enough for about 7 portions

Cost:

€8.61  in total or €1.23 per portion

Ingredients:

  • 450g of Turkey Mince
  • 1 Onion- finely chopped
  • Garlic- 1 clove
  • 1 Tablespoon of Basil
  • Passata- 250ml
  • 1 Tin Chopped Tomatoes
  • 1 Tin Kidney Beans
  • 1 Tin Mixed Beans
  • 2 Tbsp Chili Powder
  • 1 Tsp Cayenne Pepper
  • 1 Tbsp Cumin
  • 1 Head of Cauliflower

Method

Chili

  1. Heat some coconut oil in a frying pan on a high heat
  2. Fry your onion on a high heat in some coconut oil until it starts to soften
  3. Add in the mince and fry until it all starts to change colour and cook.
  4. Meanwhile, drain and rinse your beans
  5. Now stir in all of the other ingredients apart from the cauliflower
  6. Give it all a good stir, reduce the temperature to a simmer, and leave to cook on the hob for a good few hours (Ideally 3 hours)
  7. If you have someone who is fussy about ‘Bits’ and texture, you can run the chilli through the food processor for just a couple of seconds when its cooked, to give it a finer texture. Otherwise. Serve as it is!

Cauliflower Rice

  1. Chop up the cauliflower, removing the core
  2. Put in the food processor for a couple of seconds until it is a ‘rice’ like texture.
  3. Now add it to a bowl, cover with cling film and then microwave for 3 minutes.
  4. This goes great with the chili, hard to believe its cauliflower.
  5. This also freezes really well, do it in individual portions, put them in freezer bags and freeze the ‘rice’ raw, then you can get it out the freezer and cook it from frozen as if its normal microwave rice.

Tips:

  • Add more spice if you need to
  • Lie about the cauliflower rice and pretend its Quinoa if you are feeding any fussy eaters, trust me, they will never know.
